(dairy free, refined sugar free and gluten free)
Our favorite green smoothy. Sometimes this all we have for supper.
It is calorie dense due to the avocado and coconut milk, so it stays with you. Jam packed with nutrition. It is so healthy.
Makes enough for two or three large glasses.
2 cups packed kale or spinach
2 cups frozen pineapple/mango mix
1 can coconut milk
1 ripe banana
2 or 3 dates(to taste)
1 tsp vanilla
coconut water for thinning, if necessary
Put first 7 ingredients into blender. Blend on high for about 3 minutes.if mixture is too thick to blend, add a bit of coconut water. This smoothy has the consistency of a very thick milk shake. The avocado lends a very smooth, pudding-like texture.
If you prefer a sweeter smoothy, add more dates. You cannot taste the dates, they just sweeten the mixture.
Make sure to read the labels. Choose frozen fruit with no added sugar. Choose coconut milk that has natural ingredients.
